
Gardens and Refectories in Florence
Aligned with the core theme of Expo 2015, ‘Feeding the Planet, Energy for Life’, urban garden plots are now being prepared at the Cascine teaching farm of the Istituto Agrario of Florence, where for years the school’s students have been tending 13 hectares of short-chain cultivations. The project has been awarded the patronage of Expo 2015.
The products of this special garden, planted according to criteria of territoriality and seasonality, will find their way into the kitchen on occasion of the theme dinners organised in settings of high historic and iconic impact, such as several of the city’s most significant monumental refectories.
For these special, evocative dinners, a selection of Tuscany’s most talented chefs will prepare and cook local products, following the ancient recipes of the major monastic orders. The dinners are theme-related: the importance and excellence of the agricultural products of our territory, local traditions in food and wine and the sacral significance of various foods in Christian iconography, and others.
Each of these appointments is open to selected dinner guests, including several delegations from other nations which have already expressed interest in the project.
